Later today Ryan and I are getting on a plane and going to the DMV. That’s DC, Maryland, and Virginia ya’ll. Yeah, I said ya’ll because I’m going back to the US. And yeah, we’re going to all three parts of the DMV. Virginia to stay, DC to visit with friends and colleagues, and Maryland to party at a wedding. I’m incredibly excited because I haven’t been back to the area since June and I cannot wait to see my friend, eat at my favorite restaurants, and even be a tourist and see the monuments on the Mall.

However, the thing about being on vacation is that I don’t usually eat very well. I usually spend most of my time out at restaurants and eating whatever I want. Then, by the time I go home I’m ready for a healthy eating detox. Also, restaurants are expensive. So I was wondering if it was possible for me to cook some meals in my hotel room. Ya know, so I could be a little healthy, feel homey, and spend a little less. I did some research and I found out people make all kinds of crazy meals in hotel rooms!  I’ve compiled ten ideas for hotel cooking. 

I’ve chosen recipes that can be made with things found in a standard hotel room: mini fridge, coffee maker, iron, and mugs. The only special tools you should need are aluminum foil and knife, which I bet you could borrow from the hotel.

Breakfast to Cook in Hotels1. Yogurt with Granola – Easy, delicious and filling. Also, if you have a favorite homemade granola that’s really easy to bring with you in your carry on.

2. Cereal – Use the mug in your hotel room as your bowl, and you’re set for cereal. Buy your favorite brand from a local grocery store, or mix your own cereal using some granola, oats, and dried fruit. Just because you’re on vacation doesn’t mean you can’t mix and match what you make for breakfast.

3. Soft or hard boiled egg – This is such an ingenious recipe idea! Put the egg in the coffee pot then run the water through and your egg will cook. So simple and yet so cool.

4. Ginger and Lemon Fruit Salad – Fruit salad is so easy and eating lots of fruit in the morning always makes me feel healthy. I like this recipe because you can buy almost all the ingredients pre-sliced in case you don’t have access to a knife and cutting board. Also, I think using ginger and lemon sounds like a nice twist.

5. Oatmeal – I’m not a fan of oatmeal, but it makes sense for travel breakfasts. It’s easy to carry with you and easy to fancy it up with seasonings, fruits, and honey.

Lunch and Dinner Ideas1. Rice –  Use instant rice and all you have to do it run the water and keep the machine running so it will stay hot until cooked through. Rice can be a great base. You can mix in things you buy at the store or mix in leftovers from when you went to a restaurant.

2. Steamed vegetables – This recipe seems like a lot of work because you’ll have to run the water through a few times to get the vegetables to your desired done-ness. However, sometimes I crave vegetables after eating lots of heavy foods, so it might be worth it. Also you could also cut the veggies thin and then “grill” them using the iron. 3. Quesadilla – So easy and very few ingredients. All you’ll need is tortillas, cheese, and other thing veggies or spices you might like. Wrap it all in aluminium foil and then press it with a hot iron until melted. Easy and delicious.

4. Grilled cheese – Basically the same method as the quesadilla. You don’t have to go crazy and be as fancy as to make crab grilled cheese, but you can add some flair to your sandwich and simply press it with the iron covered in aluminium foil.

5. Lemon Pepper Chicken – I’m simultaneously terrified and intrigued by this recipe. I mean cooking chicken in a coffee pot?! But basically the idea is that you’re poaching the chicken. It seems worth trying just to see how it would come out. Also, you could cut the chicken really thin, wrap it in tin foil, and cook it with a hot iron.

So here’s a list of 10 recipes, 5 for breakfast and 5 for lunch and dinner, that you can cook in a basic hotel room. I’ll let you know what I try out and if I’m brave enough to cook in the coffee pot!

Pumpkin Oat Cookies Remember when I made a pumpkin swiss roll and I told you that I couldn’t get enough pumpkin? Well since then I’ve had a ton of pumpkin spice lattes, I’ve bought a felt jack-o-lantern garland to hang in the window, and now I’ve made these pumpkin oatmeal cookies with chocolate chips and cranberries. My recommendation, buy one can of pumpkin puree and and you’ll have enough pumpkin for both this recipe and the roll. That’s the perfect way to get your fill of pumpkin flavored foods!

These cookies are lovely because they taste and smell like all the best part of the holidays. Making these, and baking these, made me feel like I was walking through a Christmas market drinking cider. They evoke a sense memory that is soothing and makes me feel like I’m snuggled in a blanket. But in all honesty, they don’t taste too strongly of pumpkin. It’s no matter though because in addition to pumpkin there are chocolate chips, dried cranberries, pumpkin pie spice, and molasses (which is called dark treacle here). See, it has all the yummy flavors of autumn.

Pumpkin Oat Cookies

The cookie batter is  little weird because it is soft and sticky. It is less easy to manage than a regular chocolate chip cookie batter. It also calls for melted butter, and I’m not sure why because I didn’t create this recipe, it’s from Sally’s Baking Addiction. The thing about the melted butter is, when I melted it and it cooled it the cookies came out thicker and more cakey. When I melted the butter, but mixed it hot, the cookies came out thinner and softer. I don’t really know the science of why this works, but this is my observation. I just started my job at the Science Museum, so I feel a little bad not knowing the science and just asking us all to accept some sort of baking mystery. But, I did do some research and it seems like other bakers have had the same experience. What I remember from making gluten-free cookies is that melted butter helps wet what could be a dry mixture and help activate the protein structures. How that makes the cookies spread, I don’t know. I’ll look into it and get back to you.

If you try it, let me know how it goes for you. But, do with this information what you will, the main effect is on texture. The delicious flavor is there regardless. Also, for those visual learners among you, check out the difference in texture in the photos below.

What’s most important thought, is that you make these cookies. You should definitely make them if you’re having people over! Your home will smell amazing and everyone will be happy because there will be cookies.

Two SpoonsMessy level: Ordinarily I would give basic drop cookies 1 spoon, since they are easy to mix in a bowl or two. These cookies are two spoons because the batter is sticky and so it gets all over your hands as you put the cookies on the sheet to bake. Also, molasses is a pain to measure and pour. A good tip is to spray your measuring spoon with some cooking spray, then pour in the molasses. The molasses will slip right out and won’t be stuck in the spoon!

Delicious cookies that have all the flavors of autumn

Ingredients
  • 2 cups + 1 tbsp all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1 heaping tsp pumpkin pie spice
  • ½ tsp salt
  • 1½ cups old-fashioned rolled oats
  • 8 oz unsalted butter, melted
  • ¼ cup dark molasses
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg yolk
  • ¾ cup pumpkin puree
  • 1 teaspoon vanilla extract
  • chocolate chips and dried cranberries - a combo up to a total of 1½ cups.
Instructions
  1. Preheat oven to 350°/180°.
  2. Line a baking sheet with parchment paper.
  3. If you'd like the cookies thicker, melt the butter now. If you want them thin, don't melt the butter yet.
  4. In a large bowl, mix the flour, baking soda, cinnamon, pumpkin pie spice, and salt. Once well mixed, fold in the oats.
  5. If you want your cookies thin, melt the butter now.
  6. In a medium bowl, whisk the butter, molasses and both sugars.
  7. Once combined, stir in the egg.
  8. Now add the pumpkin and vanilla to the sugary-egg mixture.
  9. Pour the wet ingredients into the dry ingredients and gently mix.
  10. Add in your chocolate chips and dried cranberries.
  11. Scoop about 1-2 tbsp of dough onto the prepared sheets. Give the batter enough space to spread.
  12. Bake the cookies for 13-15 minutes.
  13. Allow the cookies to cool completely on the baking sheets.

I decided to start this blog a week before my thesis was due so there hasn’t been a lot of time for cooking. But I was so excited, I wanted to make something, so I decided to on this recipe for blueberry baked oatmeal. It’s so delicious and easy. It was the perfect meal for last weekend.  I went to New York  last weekend to work on my thesis and turn it in. (YAY!) This recipe fed me for two straight days, it was warm, delicious and the perfect brain food. 

Baked Oatmeal with Blueberries

In general, I really don’t like oatmeal. It’s lumpy and has a weird texture. The first time my future mother-in-law made it I was nervous because, as I said, I don’t like oatmeal. But this recipe is delicious! Baked it becomes a like a bready/cake and its filling and wonderful. Also making it feels like preparing a fancy weekend breakfast – but it’s so fast to make it could be made any time.

Blueberry baked oatmeal

I love this recipe with blueberries because they get warm and gooey. My mother-in-law also recommends sweet potatoes or canned pumpkin. I think this would be good with anything that you’d put in a pie, like chocolate chips, strawberries, apples and cinnamon, or brown sugar on top to make a crunchy sweet coating.  Just have fun with it!

one spoonMessy level: One spoon. This is so flipping clean and straightforward. Mix everything in a bowl, poor into your backing dish. Boom, you’re done.

 

Blueberry Baked Oatmeal

Ingredients
  • ½ cup vegetable oil
  • ½ cup sugar (use up to 1 cup if you like it sweeter)
  • 2 eggs, beaten
  • 3 cups quick oats
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1 pint blueberries (or other fruit you like)
Instructions
  1. Preheat oven to 350°F/180°C.
  2. Grease an 8x8 pan with butter.
  3. In a large bowl, mix together the oil, sugar, and eggs.
  4. Then add the oatmeal, baking powder, salt, and milk.
  5. Fold in the blueberries.
  6. Stir all ingredients until well mixed.
  7. Put the mixture into the pan. Use a spoon to evenly flatten and pack in the oatmeal mixture.
  8. Bake for 30-35 minutes until slightly browned on the edges.
